Pho Noodles w/Chicken (serves 3-4 people)
Ingredients:
1 bag of Pho Noodles
4-5 cups of chicken broth
2 large chicken breasts or 6 chicken strips
1 onion
celery
corn
2 cloves garlic
(other vegetables as desired)
cilantro
salt & pepper
How to:
Begin by sauteing chopped up chicken in a skillet with olive oil. Let chicken fully cook and then add onion and fresh garlic.
Start boiling water for Pho Noodles in separate pot.
Chop up all vegetables and add to chicken. Once vegetables are a bit soft, add all chicken broth + salt and pepper. Cover and let simmer for 10-15 minutes depending on your preference for tenderness of vegetables.
Once water is boiled for noodles, add Pho. Let cook for 5 minutes or so. Drain water.
Your Pho Noodles are ready to serve!
Grab your bowls. Add the Pho and then top with chicken & veggies (make sure you get enough broth in your bowl!)
And...our personal favorite - go ahead and add a handful of cilantro!
Enjoy!
