Friend,
I've been waiting weeks to share this recipe with you & I finally tackled the whole "food blog" idea! I'm super passionate about serving wholesome meals that are nutrition-filled for you and your family!
A few questions to get us started this week:
Do you think of making meals as a creative project or just stinkin' hard work?
Do you know what ingredients mix well together?
Do you have basic knowledge of what foods are nutrition filled, meaning foods that give your body long-term fuel for the road of life?
I have one piece of advice for you: || BE CREATIVE || and think of those all time favorite movies like Ratatouille or Julie & Julia.
Without any more delay, here's our new favorite dish that was born out of "a little of this & a little of that."
~ Spaghetti Squash Stir-Fry w/Bacon & Avocado ~
Serves 2
Ingredients:
1 spaghetti squash
1 1/2 c. chopped broccoli
1/2 c. chopped carrots
1 chopped onion
1/2 c. sweet corn
3 cloves garlic
1 avocado
5 pieces bacon
olive oil
salt & pepper
Step #1: Cut spaghetti squash in half, remove seeds & bake in oven for 45-55 minutes at 350 degrees.
Step #2: Cook bacon on baking sheet until crispy. Remove from oven and paper towel dry to remove access grease.
Step #3: Chop onion, garlic, broccoli and carrots. Saute all vegetables (including corn) in a pan over the stove with olive oil.
Step #4: Once spaghetti squash is soft enough to scoop out, remove from oven and scoop into pan with vegetables. Add olive oil, salt, pepper & other spices/herbs to taste. (we like adding cumin OR fresh cilantro!) Let all ingredients blend well over stove for another 10 minutes.
Step #5: Serve in bowls w/bacon and avocado on top!
ENJOY!
